Teaching probiotics in the industrial microbiology track requires students to connect theoretical knowledge with real commercial products. However, conventional learning activities may provide limited opportunities for students to critically evaluate probiotic products and communicate scientific information creatively, particularly to the public. Therefore, a student-centred teaching and learning activity integrating product evaluation, artificial intelligence (AI), creativity and science communication was introduced. This project aimed to enhance students’ understanding of commercial probiotic products while developing critical thinking, creativity, communication skills and responsible AI use. Final-year microbiology students were divided into small groups, and each group was assigned a commercial probiotic product. Students evaluated the suitability of the probiotic strain(s) and critically examined the product’s packaging and labelling, particularly their relevance to product quality and probiotic viability. The findings were presented as an infographic developed using AI-assisted tools, including NotebookLM. Students were required to formulate appropriate prompts, evaluate the generated content and refine it based on scientific knowledge. Each group then developed AI-assisted song lyrics to promote its assigned product. The infographic and song were presented to the class. Students also completed an AI-use declaration to promote transparency and responsible AI practices. The activity enabled students to apply classroom knowledge to real commercial probiotic products and enhanced their understanding of probiotic strains, packaging and labelling. It encouraged students to critically analyse commercial products rather than rely solely on manufacturers’ information. Developing infographics improved their ability to organise and communicate scientific information visually, while song creation encouraged them to simplify scientific concepts for public understanding. Students also reported increased confidence in explaining probiotic concepts to non-scientific audiences and greater opportunities for creative thinking. Most students found the integration of science, AI and creative media enjoyable and engaging. In conclusion, PROBIO 360° transforms a conventional assignment into an engaging experiential learning activity that integrates scientific knowledge, critical thinking, creativity, communication and responsible AI use.
